A delicious southern dish that's very filling and so easy to make! Grandma's corn soup recipe is loaded with flavor and contains sausage, potatoes, corn and more!

My grandma taught us how to make this years ago, and it has been a family favorite ever since!

Serve fresh over rice or cauliflower rice (lower carb). It also tastes delicious heated up as leftovers!

Grandma's Easy Corn Soup Recipe

A delicious southern dish that's very filling and so easy to make! Grandma's corn soup recipe is loaded with flavor and contains sausage, potatoes, corn and more!

Ingredients

  • 1 package frozen seasoning blend (pictsweet farms)
  • 3 - 14.75 oz cans cream style corn
  • 2 - 14.5 oz cans whole white potatoes
  • 1 - 10 oz can no salt added Rotel
  • 1 - 24 oz package of smoked sausage - thinly sliced (brand of your choice)
  • 1 - 64 oz low sodium V8 juice
  • 1 tsp garlic powder
  • 1 tsp salt and pepper (to taste)
  • 1 tsp Tony Chachere's salt free seasoning (or all purpose seasoning)
  • 2 cups rice or cauliflower rice (optional)

Instructions

  1. Place a small sauce pan on medium high heat and pour entire contents of the 2 cans of potatoes in the pot. Allow to come to a boil and cook until a fork can easily pierce the potato.
  2. In the meantime, place a stock pot on medium heat and spray with non stick cooking spray.
  3. Add sliced sausage, frozen seasoning blend, Rotel, garlic powder, Tony Chachere's, salt & pepper to the stock pan.
  4. Brown sausage and seasonings for approximately 10 minutes.
  5. Once browned, cut the whole canned potatoes in half and add to the sausage mixture.
  6. Add V8 juice and cans of corn to the stock pan.
  7. Cook on low-medium heat for approximately 20 minutes, stir frequently.
  8. Serve over a bed of rice, or cauliflower rice.
  9. Enjoy!

Notes:

Goes perfect with a side of garlic bread.
