This easy breakfast burritos recipe has been a Saturday hit in our family for many years!

It makes a large enough batch to feed everyone when the kids have friends over, or it's great to save the leftovers! You can eat the leftovers throughout the week if you don't have too big of a breakfast crowd to feed.

My favorite sausage to use for this recipe is Rabideaux's sausage, or homemade deer sausage! The other five ingredients are eggs, Pace picante sauce, sour cream, shredded cheese and tortillas.

HEALTHIER option: To make this meal a little healthier, feel free to use turkey sausage, light sour cream, low fat shredded cheese and/or low carb tortillas.

LEFTOVERS: It's no lie when I say that I eat this for breakfast almost everyday! I usually make this recipe at the beginning of the week and store the leftover mix in the refrigerator for up to 5 days.

To reheat, I put one scoop of the burrito mix in the middle of a paper plate and place a tortilla overtop the mixture. I microwave for 30 seconds, flip the plate over and roll the burrito!

FREEZER: Another option is to roll all the burritos after cooking them and freeze each burrito individually in snack size Ziplock bags. To reheat, remove the burrito from the Ziplock, wrap in a paper towel and heat for 60-70 seconds. I consume what I store in the freezer within 14 days of making them.

Easy Breakfast Burritos Recipe

These delicious, six ingredient, easy-to-make breakfast burritos are great for feeding a big family or meal prepping for the week!

  • 1 package sausage of your choice
  • 10 eggs
  • 2/3 cup Pace picante sauce
  • 1 1/4 cup shredded cheddar cheese
  • 2/3 cup sour cream
  • 1 package Mission tortillas
  1. Cut and dice the sausage.

  2. Brown sausage in a large skillet on medium-high heat. Drain grease as needed.

  3. In the same skillet, on medium low heat, add 10 eggs to the browned sausage.

  4. Continue to scramble the eggs with the browned sausage using a spatula.

  5. Once eggs are cooked, add 2/3rd cups Pace picante sauce and 2/3rd cups of sour cream. Mix contents of the skillet with a spatula.

  6. Turn the heat down to low, and add 1 1/4th cups of shredded cheddar cheese.

  7. Mix the contents of the pan thoroughly.

  8. Place a scoop of the mixture on each tortilla and roll the burritos.

  9. May place a toothpick in the middle as shown in the picture to prevent the burrito from opening.

  10. Serve with a side of salsa if desired.

  11. Enjoy!
