A perfect recipe for Saturday mornings, or any other day of the week! This pancake egg sandwich, also known as a "panwich," is so tasty! It's also really easy to make, and I'm sharing my secret ingredient!

SECRET: When I prepare the pancake batter, I put about 1/8 teaspoon of vanilla extract!

My favorite pancake mix to use is Hungry Jack Complete because you only have to add water! It's so easy, yet still delicious.

I usually make a whole batch on the weekend and freeze the leftover sandwiches to be used during the work week. When I already have something prepared, I'm much more likely not to skip the most important meal of the day!

I freeze each extra sandwich in its own Ziplock bag. Then, when I'm ready to eat it, I heat it in the microwave for 1-2 minutes before eating.

You can add more protein by putting a slice of ham, sausage or bacon on your sandwich as well.

I don't know about you, but I love pancakes and homemade egg sandwiches! Mix the two together and that's something I'll never get tired of eating! Drizzle some Hungry Jack syrup over top and indulge!

Pancake Egg Sandwich

Enjoy a delicious, cheesy egg sandwich using small pancakes as the bread! Easy, tasty and something the whole family will love! This pancake egg sandwich is a hit with the kiddos as well!

  • 1 box Hungry Jack Complete pancake mix ((just add water))
  • 1/8 tsp almond extract ((optional))
  • 4 eggs
  • 4 slices cheddar cheese
  • 4 pieces ham, sausage or bacon ((optional))
  • 1 tbsp Hungry Jack syrup
  1. Follow the directions on the box to prepare a batch of Hungry Jack just add water pancake mix. SECRET INGREDIENT: I LOVE using a dash of vanilla extract in my pancake batter!

  2. Place 2 large skillets on medium heat and spray with non stick cooking spray.

  3. Pour 4 small pancakes into one skillet. Approximately 1/8 cup of mix per pancake.

  4. Crack 2 eggs into the second skillet.

  5. Cook pancakes and eggs for 2 minutes on 1 side. Flip, then cook an additional 1-2 minutes on the other side.

  6. Put your cooked egg topped with a slice of cheese in between two pancakes.

  7. Add a slice of ham, sausage or bacon to your sandwich if desired.

  8. Repeat the steps again to make the last 2 sandwiches.

  9. Serve & enjoy!
