It's a perfect supper on Taco tuesday, or on a cold winter's day! Even the leftovers are delicious! Plus, you only have one pot to clean after dinner!!

Top your hot bowl of taco soup with sour cream, shredded cheese, tortilla strips, chopped green onions, pico de gallo or sliced avocado!

You may use ground chicken or ground turkey in place of the ground beef.

Add chili powder, a dry ranch seasoning packet or diced green chiles to spice up this one pot taco soup recipe.

This one pot taco soup recipe can easily be customized to a low sodium meal for those of you following a low sodium diet!

One Pot Taco Soup

The easiest, one pot taco soup recipe! Great for a cold winter's day! 

  • 3 lbs ground meat
  • 1 tbsp Worcestershire sauce
  • 1 bag Picsweet farms frozen seasoning blend
  • 3 packets taco seasoning ((low sodium optional))
  • 1 32 oz carton chicken broth ((low sodium optional))
  • 1 can black beans - rinsed and drained ((low sodium optional))
  • 2 cans corn ((no salt added optional))
  • 1 can Rotel ((no salt added optional))
  • 2 chopped fresh zucchini
  • 1 tsp garlic powder
  • 1 cup water
  1. Place a large pot on medium-high heat and spray with non stick cooking spray.

  2. Add 3 lbs of ground meat, Worcestershire sauce and frozen bag of seasoning blend to the pot. Begin browning the meat.

  3. Once ground meat is thoroughly cooked, drain grease as necessary.

  4. Add the three packets of taco seasoning and stir.

  5. Dump the remaining ingredients into the pot: chicken broth, black beans, corn, Rotel, zucchini, garlic powder and water.

  6. Simmer on low-medium heat for 30 minutes, stirring frequently. 

  7. Optional toppings: tortilla strips, sour cream, shredded cheese, chopped green onion, pico de gallo, sliced avocado.

  8. Serve & enjoy!!
