I prep these foods weekly, which not only saves time to make my salads for lunch, but it also allows you to throw chicken, spinach or boiled eggs in other meals or snacks throughout the week.

Grilled Chicken Salad Recipe with Avocado, Strawberries & Blueberries

This light and healthy grilled chicken salad recipe is filled with avocado, strawberries, blueberries and more! It's packed with protein, nutrients and tasty flavor!
Ingredients
- 2 thinly sliced grilled chicken breast
- 1 tbsp olive oil
- 2 eggs hard boiled
- 4 cups baby spinach leaves
- 1 whole avocado
- 8 fresh strawberries
- 1 cup blueberries
- 4 tbsp feta cheese
- 2 tbsp sliced almonds
- 4 tbsp light vidalia onion dressing
- 1 fresh lime
- 1 tbsp ground flaxseed (optional)
- salt & pepper to taste
Instructions
- Heat a skillet on medium-high heat.
- Add olive oil and chicken breast to skillet. Place salt and pepper on chicken breast to your desired taste.
- Sear for approximately 20-25 minutes flipping the chicken breast every 5 minutes until internal temperature reaches 165 degrees F.
- While the chicken is cooking, beginning preparing two large salad bowls.
- Place two cups of baby spinach leaves in each bowl, 4 halved strawberries in each bowl and 1/2 cup fresh blueberries in each bowl.
- Add 2 tbsp feta cheese and 1 tbsp of sliced almonds to each bowl.
- Once the chicken is finished cooking, dice up the chicken breasts and split between each salad bowl.
- Slice the avocado and split between each salad.
- Cut the lime in half and squeeze one half of fresh lime juice over each salad.
- Dice each boiled egg and add 1 to each salad bowl.
- Top with 2 tbsp vidalia onion dressing.
- Serve & enjoy!
Notes:
To save some prep time on this recipe, you could use store bought hard boiled eggs and pre cooked frozen grilled chicken breasts.
