The Best Red Beans with Chili Cheese Fritos Recipe

You've got to see this recipe! It's THE ABSOLUTE BEST way I've ever eaten red beans! A true southern dish that's loaded with flavor and cheesy goodness! This red beans with chili cheese fritos recipe will leave you wanting more!

This recipe has been passed down in my family for years. I actually learned how to make it at my grandma's house in Thibodaux, LA as a child.

These Louisiana style red beans not only taste delicious right after cooking, but they are just as good, if not better, the second day warmed up! This recipe makes quite a bit of food, so it’s pretty typical that you’ll have leftovers, unless you are feeding a large crowd.

Red Beans with Chili Cheese Fritos Recipe

A delicious recipe for Louisiana style red beans topped with chili cheese Fritos and shredded cheddar cheese. A true southern dish that's loaded with flavor and cheesy goodness!

Ingredients

  • 2 bags Camellia red beans
  • 1 bag frozen seasoning blend
  • 2 lbs smoked sausage (any brand)
  • 1 can low sodium Rotel
  • 1 tbsp Worcestershire sauce
  • 1/2 tbsp minced garlic
  • 1 tsp Tony Chachere's (or season all)
  • 1/2 tsp chili powder
  • 2 bags chili cheese fritos
  • 1 bag shredded cheddar cheese
  • Optional toppings: sour cream, fresh green onion

Instructions

  1. Sort and rinse the red beans and place in a large pot.
  2. Fill the pot with water. Water should be 2 inches above the red beans. (Approximately 15 cups)
  3. Bring red beans to a boil on high heat.
  4. Once the contents of the pot begin to boil, turn off heat.
  5. Allow beans to sit for 1 hour.
  6. While beans are soaking, begin chopping the sausage into ~1/2 inch pieces.
  7. Spray a large skillet with non stick cooking spray and place on medium-high heat.
  8. Add bag of frozen seasoning blend, can of Rotel, Worcestershire sauce and chopped sausage to skillet.
  9. Cook for approximately 12 minutes (stirring frequently), or until onions are translucent.
  10. Once beans have soaked for 60 minutes, turn back on low heat.
  11. Add browned sausage mixture, garlic, chili powder & Tony Chachere's to the pot of red beans. (You may need to add water periodically to keep the beans from drying out.)
  12. Cook on low heat for 2-2.5 hours, stirring frequently.
  13. Serving Instructions: Fill a cereal bowl with chili cheese fritos, add red beans, then put shredded cheddar cheese on top.
  14. Enjoy!

Notes:

Soaking: The recipe uses a "quick soak" method for the red beans. If time allows, do these steps the night before. Sort and rinse beans, place in a large pot, fill with water 2 inches above the line of red beans, soak overnight. This method will take the place of steps 1-5 in the recipe above.


Leftovers: Often times this recipe allows for leftovers. Serve with fritos and cheddar cheese again, or serve over a bed of rice.


Thickening: To thicken the consistency of your beans, smash 1 cooking spoon of beans against the side of the pot to allow them to soak up some of the excess liquid.


Toppings: May also top with a spoon of sour cream and some fresh green onions.
