You've got to try these absolutely delicious BBQ chicken quesadillas that everyone in the family will love! It's a very tasty meal with little preparation needed, as well as a short cooking time.

BBQ Chicken Quesadilla Recipe

This delicious recipe is loaded with flavor and so incredibly tasty! Super easy to make and something the whole family will love!

• 1/4 cup green onion ((chopped))
• 2 cups monterrey jack cheese ((shredded))
• 2 breasts grilled boneless skinless chicken ((cooked & cut into strips))
• 1 cup BBQ sauce ((your choice))
• 8 flour tortillas
• 1 bunch fresh cilantro ((optional topping))
• 1/2 cup light or regular sour cream ((optional topping))
• 1 cup guacamole ((optional topping))
• 1 fresh lime ((optional topping))

1. Place a large skillet on medium-high heat and spray with non stick cooking spray.

2. On a flour tortilla, sprinkle 1/4 cup monterey jack shredded cheese.

3. Spread strips of chicken from 1/2 of a chicken breast on top of the cheese.

4. Drizzle some BBQ sauce and a small amount of green onion onto the tortilla.

5. Add an additional 1/4 cup of shredded cheese and place another tortilla on top.

6. Place quesadilla in skillet and grill for about 3 minutes.

7. Flip quesadilla using a large spatula and cook on the second side for about 3 minutes, or until tortillas are golden brown.

8. Repeat for each quesadilla.

9. Add your choice of toppings to the quesadillas.

10. Enjoy!!

    

This recipe goes great with a side of chips and dip (salsa, guacamole, or queso) or some cream style corn!
