Low Carb Omelet Cups

These delicious, low carb omelet cups with ham and eggs are so tasty and simple to make. Easy to customize by using any kind of thinly sliced meat, egg beaters or egg whites.

Since the recipe below makes 6 omelet cups, I love to use a 6 muffin cup pan that fits perfectly in the toaster oven. I have also made a single or double batch of these in a conventional oven.

I like to pair my omelet cups with citrus fruit and half of an avocado. I also put some salsa verde on them and it is delicious!

Get creative with your sides and toppings!

And of course, I did not forget my morning cup of coffee to go along with the omelet cups.

Low Carb Omelet Cups - Ham & Egg

These delicious, low carb omelet cups with ham and eggs are so tasty and simple to make. Easy to customize by using any kind of thinly sliced meat, egg beaters or egg whites.

Ingredients

  • 12 pieces of thinly sliced ham (any thinly sliced meat will work)
  • 5 eggs
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup chopped green onion
  • 1/4 cup chopped bell pepper
  • Dash of ground black pepper
  • 2 tbsp chopped jalapeños (optional)

Instructions

  1. Mix eggs, cheddar cheese, green onion, bell pepper, and black pepper in a bowl. If you choose to use jalapeños, add those as well.
  2. Place two pieces of ham to form a cup in the muffin pan.
  3. Fill cups evenly with egg mixture.
  4. Bake on 380 degrees for 25 minutes.
  5. Enjoy!

Notes:

May substitute the eggs with egg beaters or egg whites.
