Ingredients
- 16 oz colby jack cheese block (pepper jack optional)
- 8 slices of bread (we love Sara Lee Artesano style bread)
- 1 stick of butter (room temperature works best)
- 1 bag of croutons
- 1/4 cup chopped green onion
- 32 oz carton tomato soup (I buy low-sodium)
Instructions
- In a saucepan, pour entire contents of tomato soup. Heat on low-medium heat for approximately 10 minutes, stirring frequently.
- Cut block of cheese into thin slices.
- Butter both sides of 8 slices of bread.
- Place 4 slices of bread into a grill pan on low-medium heat.
- Put 6-8 thin slices of cheese on each piece of bread.
- Place remaining 4 pieces of buttered bread on top to make the 4 sandwiches.
- Cook for approximately 5 minutes on both sides, or until bread is crisp golden brown.
- Pour heated soup into 4 small bowls and garnish with croutons and chopped green onion.
- Enjoy!
