These chocolate peanut butter overnight oats made with EarthChimp protein is packed with delicious ingredients that will curb your hunger for hours after eating. I enjoy these oats for breakfast with fresh fruit, my favorite are bananas and strawberries. I even sometimes take a few bites for an afternoon pick me up or before a workout.
This is by far my favorite way to make overnight oats! The key to the consistency is mixing it in the exact order the recipe calls for.
I find these oats to be perfectly sweet for my taste, but if you like something sweeter, try adding Lily’s chocolate chips, sliced bananas or sliced strawberries to top it.
I have loved my experience with EarthChimp protein, and I hope you will also! It’s hard to find an organic, vegan protein that does not have an icky after taste. Bonus that it has probiotics and it’s dairy, soy and gluten free. I have been really impressed with the quality of this protein powder in smoothies, yogurt bowls, overnight oats and protein bites.
My overnight oats recipe is really quick and easy to make for one batch, or to make multiple servings for the week’s meal preps.

Chocolate Peanut Butter Overnight Oats with Earth Chimp Protein
Ingredients
- 2 scoops Earth Chimp chocolate protein powder
- 1/2 cup Fage 2% Greek yogurt
- 1/2 - 3/4 cup Fairlife 2% milk
- 2 tbsp peanut butter
- 1/2 cup quick oats
- Fresh strawberries, fresh banana or Lily's chocolate chips (optional)
Instructions
- In a medium size bowl, combine 1/2 cup Fage Greek yogurt and 1/2 - 3/4 cup Fairlife milk (see note below). Mix well using a spoon.
- Mix in 2 scoops of chocolate protein powder and whip together well.
- Add in 2 tbsp of peanut butter and mix well. I like to use the flat back side of the spoon to help it combine with the other ingredients.
- Lastly, pour in 1/2 cup quick oats and mix well.
- Cover your dish and allow it to sit in the fridge overnight, or for ~12 hours.
- Enjoy your chocolate peanut butter overnight oats as prepared, or top with sliced bananas, sliced strawberries or Lily's chocolate chips.
Notes
CONSISTENCY:
Using 1/2 cup of milk will be the consistency shown in the picture which is slightly thicker. Use 3/4 cup milk if you'd like your overnight oats to not be as thick. Keep in mind that the oats will soak up some of the liquid as it sits overnight.
The key to achieving our favorite consistency is to follow the steps in the exact order given and be sure ingredients are whipped well and combined together before moving to the next step.
We do recommend allowing your oats to sit overnight, but if you are pressed for time they should sit in the refrigerator for at least 2 hours before consuming.
If you are not a heavy breakfast eater, it is totally fine to eat half of the oats you prepared on 2 separate days.
