These simply delicious chicken stuffed sweet potatoes are loaded with flavor and so easy to make! Great healthier alternative that's still a very filling meal.
You can substitute the sweet potatoes for russet potatoes if you’d like!
Also, feel free to get creative with the toppings you use for your potatoes.

Chicken Stuffed Sweet Potatoes

These simply delicious chicken stuffed sweet potatoes are loaded with flavor and a healthier choice for a filling meal.
Ingredients
- 4 sweet potatoes
- 1 bag frozen grilled chicken strips (fully cooked)
- 1/2 cup light sour cream
- 1 cup restaurant style salsa
- 1 cup reduced fat shredded mozzarella cheese
- 1 bunch fresh cilantro
- salt & pepper (to taste)
Instructions
- Thoroughly wash sweet potatoes and pierce with a fork multiple times.
- Cook the sweet potatoes in your microwave using the suggested potato setting.
- While sweet potatoes are cooking, pour contents of grilled chicken in a greased skillet on medium heat.
- Heat the fully cooked chicken strips for approximately 5 minutes, or until warm.
- Set aside.
- When potatoes are finished cooking, cut in half lengthwise to begin stuffing.
- Add 2/3 cup chicken and 1/4 cup shredded cheese to each potato.
- Allow the cheese to melt for approximately 2 minutes.
- Top each sweet potato with 2 tbsp light sour cream, 1/4 cup salsa, fresh cilantro, salt and pepper.
- Enjoy!!
Notes:
May cook sweet potatoes in the oven, rather than the microwave.
May substitute sweet potatoes with russet potatoes.
